Previously I spent 27 years with United Biscuits /pladis in their Global R&D team, most recently leading the Global Ingredients Expertise team in which I operated as the company subject matter expert for cocoa, chocolate and coatings. During that time, I led the ingredients value improvement program with a YOY £10M savings challenge. This was alongside leading all chocolate recipe development for McVitie’s, chocolate operational optimisation across UK/NE sites and all chocolate process training at their 30,000T/yr chocolate refinery and user sites.
During this time I worked on iconic chocolate brands such as McVitie's, Terry's Chocolate, Jaffa, Go Ahead!, Delacre, BN, Verkade, Ulker and Godiva.
Since 2018 I’ve run my own chocolate and cocoa consultancy supporting manufacturers in the chocolate, cocoa, confectionery, biscuits and cake categories on short, medium and long term projects to increase productivity, improve quality and minimise costs.

Not only am I independent of chocolate and equipment suppliers, I have over 33 years of experience in end to end, sourcing, manufacturing, use and handling of cocoa, chocolate and compounds.
In 2018 I set up my own consultancy to focus on what I'd enjoyed doing most in my Corporate life - helping chocolate and cocoa using businesses perform better, by increasing their profit, security, efficiency and quality through process optimisation and training.
